Simple Banana Pancakes


2 ripe bananas (mashed)

2 cups whole wheat flour

2 tsp baking powder

1/2 tsp  salt

2 tbs brown sugar

4 cup soy milk

1 cup oil


Mix flour, baking powder and salt together in a bowl. Add mashed bananas and mix thoroughly. In a separate bowl mix sugar, milk and oil together until sugar dissolves completely. Add this milk mixture to the banana-flour mixture and mix well using a whisk. (Depending on the size of the bananas you might need to add a bit more milk.)

Pour desired amount of pancake batter onto a hot griddle (or what ever you use to make your pancakes). Flip when edges begin to look slightly brown and cook other side of pancake.

Serve with fruit spread or preserves.
